Chicken & Potatoes Sheet Pan Recipe
Position rack in centre of oven, then preheat to 375°F. Line a baking sheet with parchment.
Combine paprika, salt and pepper in a small bowl, and rub onto chicken breasts. Arrange on prepared baking sheet and drizzle with half the olive oil.
Scatter potatoes and garlic around the chicken. Bake for 20 minutes.
Toss tomatoes, chickpeas and oregano with remaining half of the olive oil in a medium bowl. Add tomato mixture and chicken broth to baking sheet.
Continue baking until an instant-read thermometer inserted into thickest part of breast reads 165°F, and potatoes are tender, 10 to 15 minutes.
