Position rack in centre of oven, then preheat to 375°F. Line a large baking sheet with parchment.

Slice cheese into 8 2-in pieces. Wrap a slice of ham around each piece of cheese. Make a horizontal slit about 2-1/2 in long and 1-1/2 in deep in thickest side of each chicken breast to form a pocket. Rub about 1 tsp of mustard inside each pocket. Tuck 1 piece of ham-wrapped cheese into each pocket.

Place flour on a large plate. Beat eggs in a shallow bowl. Place bread crumbs on another plate. Coat each chicken breast with flour, then egg, then bread crumbs. Arrange chicken 2 in. apart on prepared sheet. Spray with cooking spray.

Bake until breadcrumbs are golden and chicken is cooked through or until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 25 minutes.
