Chili-Chicken Fajitas

A 25-minute meal that will get the whole family excited! It's as easy as cooking peppers, onions and chicken stock, with a hint of lime juice. Serve chili-chicken filling in warm tortillas and garnish with your favourite toppings. Tip: Make it fun and interactive by setting up an assembly station on the dinner table.

    Sprinkle chicken with chili powder. Heat a large non-stick frying pan over medium-high. Add 1 tbsp oil, then chicken. Cook until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 3 minutes per side. Transfer chicken to a cutting board.

    Add remaining 1 tbsp oil, bell peppers and onions to same pan. Cook, stirring occasionally, until tender, about 8 minutes. Reduce heat to low. Stir in chicken stock until melted. Stir in lime juice.

    Slice chicken into strips and return to pan. Stir until heated through, about 1 minute.

    Serve chicken and vegetables in tortillas. Garnish with your favourite fajita toppings such as shredded cheddar cheese, sour cream and chopped cilantro, if desired.
