    Heat a large non-stick frying pan over medium. Add oil, chicken, onion, garlic and Cajun seasoning. Cook, stirring often, until chicken and vegetables are browned, about 10 minutes.

    Add wine. Simmer for 1 minute. Stir in rice until coated. Add tomatoes, broth, salt and black pepper. Bring to a boil. Stir in green pepper.

    Cook, covered, until rice is tender and all liquid is absorbed, about 15 minutes. Serve with parsley, hot sauce and lemon wedges, if desired.
