
Chicken Jambalaya

Made with chicken, ham and tomatoes this saucy one-skillet jambalaya is an easy weeknight meal. Bonus: Everything cooks together in the same pan, so you get rich flavour from the slow simmer. (Not to mention, fewer dishes to wash after dinner is over.)

Heat a large frying pan over medium-high. Add oil, then chicken and ham. Cook until chicken is no longer pink, about 5 minutes.

Add tomatoes to pan. Add water and vegetable soup mix. Increase heat to high and bring to a boil.

Stir in rice. Reduce heat to low, cover and simmer, stirring occasionally, until rice is tender, about 20 minutes.
