Chicken & Mushroom Carbonara Recipe

Create a hearty pasta dinner with chicken, fresh mushrooms, garlic and saucy noodles tonight. This mushroom carbonara recipe uses a cheesy bacon pasta shortcut with quick-cooking frozen peas to deliver a speedy meal that's ready in just 35 minutes.

    Heat a large frying pan over medium-high. Add 1 tbsp margarine, then chicken. Cook chicken for 3 minutes. Flip, then cook until an instant-read thermometer inserted into thickest part of breasts reads 165°F, about 3 more minutes. Transfer chicken to a plate and cover with foil to keep warm.

    Add remaining 1 tbsp margarine and mushrooms in same pan. Cook, stirring often, until golden, 4 to 6 minutes. Add garlic and cook 30 seconds. Stir in broth and cook until almost evaporated, about 5 minutes.

    Meanwhile, prepare Knorr Sidekicks® in a medium saucepan according to package directions, adding peas during last 3 minutes of cook time. Spoon pasta onto serving platter.

    Slice chicken. Top pasta with chicken, mushrooms and juices from skillet.
