Chicken Florentine Pasta Bake Recipe
Position rack in centre of oven, then preheat to 425°F.
Heat a large non-stick frying pan over medium-high. Add oil, then chicken. Cook, stirring occasionally, until chicken is golden, about 4 minutes. Add tomatoes. Cook, stirring occasionally, 2 minutes. Stir in water and stock concentrate until melted. Reduce heat to low. Simmer, stirring occasionally, 5 minutes.
Whisk in cream cheese until smooth. Stir in spinach until wilted, about 2 minutes. Stir in cooked penne until combined. Transfer mixture into a 2-L baking dish. Sprinkle panko evenly overtop.
Bake until panko is golden, about 10 minutes.
