Chicken Taco Bowl Recipe
Cook quinoa following package directions. Set aside to keep warm.
Heat a large non-stick frying pan over medium-high. Add oil, then chicken and cook until lightly browned, about 5 minutes.
Add onion, red pepper and spice blend. Cook until softened, about 5 minutes.
Stir in soup and milk and bring to a simmer. Cook, stirring often, until sauce is thickened and chicken is cooked through, 10 to 12 minutes.
Divide quinoa evenly among 8 bowls. Top with chicken and sauce, black beans, spinach, tomatoes, avocados and salsa. Serve immediately.
