Chicken & Rice Soup Recipe
Heat a large frying pan over medium-high. Add oil, then red bell peppers, onion, zucchini, carrot and thyme. Cook vegetables, stirring occasionally, until tender, about 6 minutes.
Add broth, water and rice & vermicelli side dish. Increase heat to high and bring to a boil. Reduce heat to low, cover and cook until rice is tender, about 10 minutes.
Stir in chicken and cook until heated through.
