This creamy rice dish is made with bell peppers, fresh sage and garlic and cooked together until the flavours blend seamlessly. Our sage and chicken risotto recipe is a hearty main course that is ready in under an hour.

    Pour broth into a medium saucepan set over high. Bring just to a simmer, then reduce heat to low and cover.

    Meanwhile, heat a large saucepan over medium. Add 2 tbsp margarine, bell pepper and onion. Cook, stirring occasionally, until vegetables are tender, about 5 minutes. Add rice and garlic. Cook, stirring often, for 2 minutes.

    Remove broth from heat and stir into saucepan with rice and vegetables. Increase heat to high. Bring to a boil, then reduce heat to medium-low. Simmer, covered and stirring occasionally, until almost all liquid is absorbed and rice is creamy and tender, about 25 minutes.

    Stir in chicken. Continue cooking, covered and stirring occasionally, until heated through, about 2 minutes. Stir in cheese, sage and remaining 1 tbsp margarine.

    Serve immediately, garnished with more cheese, if desired.
