Chicken Fried Rice With Peanut Sauce

Thai-inspired dinner uses just a few ingredients to make a delicious meal in just thirty minutes. Ground ginger, rice wine vinegar and peanut butter give this dish its satay-inspired flavour, while keeping things simple cooking in a single pan.

    Heat a large nonstick frying pan over medium-high. Add oil, then chicken. Stir-fry until chicken is cooked through, about 5 minutes. Remove chicken to a plate and set aside.

    Add bell pepper, carrot and peas to pan. Cook, stirring occasionally, until tender-crisp, about 2 minutes.

    Stir in water, peanut butter, vinegar and ginger. Increase heat to high and bring to a boil. Stir in Chicken Fried Rice. Cover and simmer until rice is tender, about 8 minutes.

    Stir in chicken and green onions. Cook just until heated through, about 2 minutes.
