Lemon-Garlic Chicken Pasta

Chicken breasts are simmered in lemon juice, stock and garlic and then tossed with angel hair pasta for a light alternative to tomato sauce. Tip: Save the pasta water! The starch from the noodles will add flavour, thicken the lemon-garlic sauce, and help it stick to your noodles.

    Combine chicken, garlic and lemon juice in medium bowl.

    Cook pasta in a large pot, following package directions, 7 to 9 minutes. Drain well, then return to pot.

    Meanwhile, heat a large nonstick frying pan over medium-high. Add oil, then chicken mixture. Cook, stirring occasionally, until chicken is cooked through, about 6 minutes.

    Stir in water and chicken stock until combined. Add pasta, then parsley and toss well to combine.
