Easy Turkey Chili Recipe

Packed with vegetables and lean meat, this easy, slowly simmered turkey chili is perfect for winter. (It has all the same great flavour of beef chili.) Serve with a dollop of yogurt or sour cream, cheddar cheese and green onions.

This chili recipe goes well with our buttermilk-cheddar bread recipe.

    Position rack in centre of oven, then preheat to 400°F. Line a baking sheet with parchment.

    Place zucchini rounds in one layer on prepared sheet. Bake until slightly brown and tender, about 8 to 10 minutes.

    Meanwhile, heat a pot over medium. Add oil, then onion. Cook, stirring often, until onions are softened, about 3 to 4 minutes. Add celery, bell pepper and garlic. Cook, stirring often, 5 minutes.

    Add turkey, chili powder and cumin. Cook, stirring occasionally, until turkey is no longer pink, about 5 minutes.

    Stir in beans, tomatoes, broth, brown sugar and baked zucchini. Simmer, covered, until slightly thickened, about 1 hour.
