    Position rack in centre of oven, then preheat oven to 350°F. Spray a 9x13-inch baking dish with non-stick cooking spray.

    Combine sugar and cinnamon in a large bowl. Reserve 1/4 cup of cinnamon sugar in a small bowl and set aside.

    Whisk eggs and vanilla into cinnamon sugar until well blended, then add milk. Add bread cubes, apples and bacon and toss well to coat.

    Pour into prepared baking dish. Sprinkle evenly with reserved cinnamon sugar.

    Bake until a knife inserted in centre comes out clean, 35 to 40 minutes. Cool slightly on a wire rack. Serve with maple syrup.
