
Cinnamon Roasted Sweet Potatoes & Apples

Save the mashed potatoes for another night! These roasted sweet potatoes and apples are sweet, spicy and irresistible. Made with cinnamon, tart Granny Smith apples and sweet potatoes, this 45-minute side dish slow cooks to fork-tender perfection. Serve with a Sunday roast or holiday meal.

Position rack in centre of oven, then preheat to 450°F.

Stir margarine, sugar, cinnamon and black pepper in a small bowl.

Toss apples with 1 tsp cinnamon mixture in a medium bowl.

Toss potatoes with remaining cinnamon mixture on a baking sheet. Arrange in a single layer.

Bake potatoes for 10 minutes. Add apple mixture to sheet. Continue baking, stirring halfway, until potatoes and apples are fork-tender, about 25 minutes. Toss gently before serving.
