Citrus Shrimp Tacos with Lime Rice
Whisk oil, honey, zest and juice from lime, lemon and orange in a large bowl. Set aside 2 tbsp oil mixture in a small bowl.
Toss shrimp with remaining oil mixture. Set aside to marinade for 10 minutes.
Meanwhile, prepare rice following package directions. Stir reserved oil mixture and cilantro into rice until combined.
Heat a large, non-stick frying pan over medium-high. Shake off excess marinade and place shrimp in pan. Cook until shrimp just turns pink, about 3 to 5 minutes.
Spoon rice into tortillas. Top with shrimp, corn, beans and avocado.
