Citrus Shrimp Tacos with Lime Rice
Whisk the oil and honey with the juice and zest from the lime, lemon and orange. Measure out 2 tbsp (30 mL) of the mixture and set aside. Toss the shrimp with the remaining mixture; let stand for 10 minutes. Set a large, nonstick skillet over medium-high heat. Shake off excess marinade and place shrimp in the skillet. Cook for 3 to 5 minutes or just until pink. Meanwhile, prepare UNCLE BEN’S® BISTRO EXPRESS® Long Grain & Wild - Roasted Garlic Rice. Stir reserved citrus mixture and cilantro into the rice. Spoon rice into tortillas shells, top with shrimp and garnish with corn, beans and avocado.
