Glazed Apricot Chicken Recipe
Tip: If you don't want to break down a whole chicken, that's okay! This recipe will also work with bone-in chicken thighs and breasts.
Position rack in centre of oven, then preheat to 425°F.
Stir soup mix, French dressing and jam in a medium bowl.
Arrange chicken pieces in a single layer in a 9x13-in baking dish. Coat all over with apricot mixture.
Roast, basting occasionally with dressing mixture, until an instant-read thermometer inserted into thickest part of thigh reads 165°F, about 40 minutes.
