A hearty and classic minestrone soup recipe made with ditalini pasta, cannellini beans and vegetables. Serve this soup as a stand-alone meal, with a salad, or as a starter to a grand Italian feast! Dining for one? Make a big batch anyhow and freeze some portions for later.

    Cook ditalini in a medium pot following package directions. Drain well and set aside.

    Meanwhile, heat a large pot over medium. Add oil, then onion and carrot. Cook, stirring occasionally, until vegetables are tender, about 7 minutes.

    Add water, stock, tomatoes and beans, stirring until stock is dissolved. Increase heat to high and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 15 minutes.

    Stir in spinach until wilted, then ditalini. Season with salt and pepper.
