Ready in just over a half-hour, this ultra-smooth soup is perfect for winter. Blended with a savoury soup mix, it's a super-fast hack on potato and leek soup.
Tip: When blending hot ingredients like soup in your blender, be sure to crack open the centre vent to let steam escape while the machine runs. Cover loosely with a tea towel to avoid and soup blitzing up and out of the container.

Combine potatoes, water and soup mix in a pot set over high. Bring to a boil, then reduce heat to low. Simmer, covered, until potatoes are fork-tender, about 20 minutes.

Transfer mixture, in batches, into a blender. Blend until smooth, then return to pot. Stir in milk just before serving.
