Vanilla Cookie Surprise Tear-Away Cake

Is it a cookie or is it a cake? It's both! Have the best of both worlds with this delicious hybrid. How does it work? A cookie bakes into the bottom of each cupcake, which are all gathered tightly together on a platter, iced and decorated just like a sheet cake.

    Position racks in upper and lower thirds of oven, then preheat to 350°F. Line two 12-cup muffin pans with foil baking cups, discarding paper liners between each.

    Prepare cake batter following package directions.

    Place one cookie in bottom of each baking cup. Divide cake batter evenly between cups.

    Bake in upper and lower thirds of oven, switching pans halfway, until a skewer inserted into centre of cupcakes come out clean, about 18 to 21 minutes. Transfer to a rack to cool completely.

    Arrange cooled cupcakes on a serving platter or cake board in desired shape (Ensure they are clustered tightly together as they will be iced as one cake.) Starting from the centre, cover the entire surface of cupcakes with vanilla frosting. Decorate with sprinkles and decorating gels, if desired.
