Whisk 1 cup flour, 1/2 cup each cornmeal and sugar, 1 1/2 tsp baking powder, 3/4 tsp baking soda and 1/2 tsp salt in a large bowl. Whisk 2 eggs, 1 1/4 cups milk, 1/2 cup melted butter and 1 tsp vanilla in a bowl until smooth. Combine with flour mixture. Stir in 1 1/2 cups cornflakes. Scoop into a lined 12-cup muffin pan. Top with 1/4 cup crushed cornflakes and bake at 375F until a skewer inserted into centre of muffin comes out clean, 18 to 20 min. Cool in pan 10min. Remove from pan and serve warm or cool completely.
