Cornflake Muffins Recipe
Position rack in centre of oven, then preheat to 375°F. Mist a 12-cup muffin tin with cooking spray, or line with paper liners.
Whisk flour, sugar, cornmeal, baking powder, baking soda and salt in a large bowl.
Whisk eggs, milk, butter and vanilla in a separate bowl until smooth.
Stir egg mixture into flour mixture until just combined, then fold in 1 1/2 cups of the cornflakes.
Divide batter among prepared muffin cups. Top with remaining 1/4 cup of the cornflakes.
Bake until a skewer inserted into centre of muffin comes out clean, 18 to 20 minutes. Cool in pan on a rack for 10 minutes. Remove from pan and enjoy warm or cool completely before serving.
