Cornflake & Oatmeal Cookies Recipe

Add a little crunch to an otherwise chewy treat. Our cornflake and oatmeal cookies recipe uses a traditional oatmeal cookie formula, but adds breakfast cereal and pecan halves for a delightfully unexpected snack.

    Position rack in centre of oven, then preheat to 350°F. Line 2 baking sheets with parchment.

    Whisk flour, baking soda and salt in a medium bowl.

    Beat butter and sugar in a large bowl. Beat in egg and vanilla until smooth. Stir in flour mixture, cornflakes, oats and pecans.

    Roll dough by tablespoonful and place onto prepared sheets.

    Bake, one sheet at a time, until cookies are slightly firm to the touch, 12 to 14 minutes. Let cool on sheets for 1 minute, then remove to a rack to cool completely. Store tightly covered.
