Ingredients

1 cup
Flour
1/2 tsp
Baking Soda
1/4 tsp
Salt
1/2 cup
Unsalted butter
1/2 cup
Sugar
1  
Egg
1 tsp
Vanilla
1 cup
Cornflakes
30 g
Rolled Oats
1/4 cup
Pecans

    Heat oven to 350°F. Whisk 1 cup flour, 1/2 tsp baking soda and 1/4 tsp salt in a medium bowl. Beat 1/2 cup each unsalted butter at room temperature and sugar in a large bowl. Beat in 1 egg and 1 tsp vanilla until smooth. Stir in flour mixture, 1 cup cornflakes, 1/3 cup rolled oats and 1/4 cup chopped pecans. Bake 1 tbsp. portions of dough. Bake 12 to 14 minutes or until cookies are slightly firm to the touch. (Do not overbake.) Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
