Couscous and Kale Salad Recipe
Tip: For more tender leaves, lightly scrunch leaves in your hands for a few minutes while washing.
Bring water to a boil in a kettle or medium pot.
Heat a large frying pan over medium-high. Add couscous. Stir frequently, and lightly shake pan until couscous is evenly toasted, about 5 minutes. Remove from heat. Slowly stir in boiling water. Cover and let sit 5 minutes. Fluff couscous with a fork, then stir in cranberries.
Whisk oil, vinegar, salt and pepper in a large bowl. Stir in couscous mixture, kale, onion, bell pepper, almonds and feta.
