Couscous and Kale Salad Recipe

This kale salad recipe is brimming with flavour, thanks to dried cranberries, red onion, slivered almonds and tangy feta crumbles. And the added bonus? Kale is packed with nutrients, making it one of the best greens to eat!

Tip: For more tender leaves, lightly scrunch leaves in your hands for a few minutes while washing.

    Bring water to a boil in a kettle or medium pot.

    Heat a large frying pan over medium-high. Add couscous. Stir frequently, and lightly shake pan until couscous is evenly toasted, about 5 minutes. Remove from heat. Slowly stir in boiling water. Cover and let sit 5 minutes. Fluff couscous with a fork, then stir in cranberries.

    Whisk oil, vinegar, salt and pepper in a large bowl. Stir in couscous mixture, kale, onion, bell pepper, almonds and feta.
