Cranberry Orange Bread Recipe
Position rack in centre of oven, then preheat to 350°F. Spray the bottom of a 9x5-in loaf pan with non-stick cooking spray.
Combine flours, oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Set aside.
Whisk eggs, milk, orange juice, oil and orange zest in a medium bowl. Add to flour mixture all at once. Stir just until combined. (Do not over mix). Stir in cranberries and pecans. Pour into prepared pan.
Bake until a skewer inserted in centre of loaf comes out clean, about 60 to 70 minutes. Cool 10 minutes in pan, then transfer loaf to a rack to cool completely.
