Cranberry-Orange Loaf Recipe
Position rack in centre of oven, then preheat to 350°F. Spray a 9x5-inch loaf pan with non-stick cooking spray.
Combine flour, sugar, baking powder and salt in a large bowl. Whisk orange juice, mayonnaise egg, orange zest in a medium bowl until smooth. Stir into flour mixture just until moistened. Fold in cranberries and walnuts just until combined. Transfer to prepared pan.
Bake until a toothpick inserted into centre comes out clean, 60 to 70 minutes. Cool for 10 minutes, then remove from pan and let cool on a wire rack.
