Cranberry & White Chocolate Granola Bars
Position rack in centre of oven, then preheat to 350°F. Spray a 9x13-in glass baking dish with non-stick cooking spray.
Combine oats, sweetened condensed milk, butter and vanilla in a large bowl. Stir in dried cranberries and chocolate chips until well combined. Set mixture aside for 5 minutes.
Scrape mixture into prepared dish, and press down with your hands into an even layer.
Bake until lightly browned around the edges, about 22 to 25 minutes. Transfer to a rack to cool for 10 minutes, then cut into 16 bars in dish (or 48 squares) while still warm. Cool completely in dish before removing granola. Store in an air tight container for 3 to 4 days.
