Creamy Mediterranean Chicken Recipe

Black olives, sun-dried tomatoes and basil are tossed with balsamic-mayonnaise dressing to serve up a tangy punch of flavour. This creamy Mediterranean chicken recipe makes for an excellent weeknight dinner, and comes together in just 20 minutes!

    Heat a large non-stick frying pan over medium-high. Add oil, then chicken. Cook, turning once, until browned, about 8 minutes. Remove chicken to a plate and set aside.

    Combine balsamic mayonnaise, water, olives and sun-dried tomatoes in the frying pan.

    Return chicken and juices to pan. Cook over medium, stirring occasionally, until sauce thickens and an instant-read thermometer inserted into the centre read 165°F, about 2 minutes. Sprinkle with basil.
