Heat a large non-stick frying pan over medium. Add broth and cream cheese. Simmer, whisking constantly, until mixture is smooth.

Stir in chicken and cauliflower. Cook until cauliflower is tender, about 15 minutes.

Meanwhile, cook rice in a medium saucepan, following package directions.

Stir cooked rice, peas and red pepper into pan with chicken. Cook until everything is heated through, about 5 minutes. Sprinkle with Parmesan before serving, if desired.
