
Creamy Mashed Potatoes & Peas Recipe

Place potatoes in a large pot and cover with water. Set over high. Bring to a boil, then reduce heat to medium-low. Simmer until potatoes are fork-tender, about 10 to 12 minutes. Add peas. Continue cooking until peas are tender, about 3 minutes. Drain well, then return to pot.

Reduce heat to medium-low. Cook, shaking pan constantly, until potatoes are dry, about 1 minute. Remove from heat. Mash potatoes and peas to your desired consistency.

Combine milk and green onions in a small saucepan set over medium-low. Cook until milk is hot (but not simmering), then remove from heat and let stand 5 minutes.

Stir milk mixture into potatoes, along with oil and salt, until combined. Transfer potato mixture into a serving dish. Sprinkle with cheese.
