Crispy BBQ Chicken Recipe
Tip: Grill in a disposable foil pan to save on mess and keep the crisp coating where you want it (on your chicken).
Preheat one side of barbecue to 400°F for indirect grilling (one side will be lit, and the other will not.) Have a 12x16-in disposable foil pan ready.
Combine coating mix and cheese in a large shallow dish. Coat chicken pieces all over with mayonnaise. Dip chicken, one piece at a time, in cheese mixture, turning to evenly coat. Arrange chicken in a single layer in foil pan. Place pan on barbecue grate over unlit half.
Barbecue, covered, until an instant-read thermometer inserted into thickest part of a thigh reads 165°F, about 45 to 50 minutes.
