Easy Bistro Fish Dinner Recipe
Place potatoes in a medium pot and cover with cold water. Bring to a boil, then reduce heat to low. Simmer until potatoes are fork-tender, about 15 minutes, adding beans to the boiling water for the last 3 minutes. Drain.
Meanwhile, mix flour and 2 tbsp of the cheese in a pie plate. Brush 1 tbsp of the pesto evenly onto the fish. Dip fish, 1 fillet at a time, in flour mixture, turning to evenly coat both sides.
Place potatoes and beans in a large bowl. Add olives, remaining cheese and remaining pesto. Toss to coat.
Heat a large non-stick frying pan over medium-high. Add oil, then fish. Cook until fish flakes easily with a fork, about 3 minutes on each side. Serve with potatoes and beans.
