Crispy Fennel Fritters With Smoked Salmon

Looking for a quick and tasty appetizer? This unique recipe pairs smoked salmon and crunchy vegetable fritters with sour cream and crisp radish for an easy dish you can serve before dinner or as part of a large brunch.

Tip: No food processor? No problem. Grate fennel with a regular box grater.

    Grate fennel with a box grater or in a food processor. It should measure about 2 cups. Combine grated fennel with panko, Parmesan, garlic, egg and salt in a bowl. Divide fennel mixture into eight portions.

    Heat a large non-stick frying pan over medium-high. Add oil, then fennel mixture. Press down on each portion with a spatula to form patties. Pan-fry until golden, about 2 minutes per side.

    Transfer fennel cakes to a platter. Dollop sour cream over cakes and top each with a couple of smoked salmon slices, fennel fronds and radish slices. Serve at room temperature.
