Curried Chicken & Vegetable Couscous
Heat a large non-stick frying pan over medium-high. Add 1 tbsp oil, then chicken. Cook, stirring occasionally, until chicken is no longer pink, about 5 minutes. Transfer chicken to a plate.
Combine water, soup mix, raisins, curry powder and remaining 1 tbsp oil in a medium saucepan set over medium-high. Bring to a boil, stirring occasionally. Reduce heat to low. Simmer, covered, 2 minutes. Stir in couscous, then remove from heat and let stand covered 5 minutes. Stir in chicken and spinach.
Garnish with slivered almonds and chopped fresh parsley, if desired.
