Curried Chicken & Vegetable Couscous

Couscous may look like rice, but it's actually a flour and water product similar to pasta. When simmered (in water, broth or savoury vegetable soup mix like we use here), it fluffs up for a light and delicate texture. Chicken, spinach, curry and raisins are added for a texture-rich meal.

    Heat a large non-stick frying pan over medium-high. Add 1 tbsp oil, then chicken. Cook, stirring occasionally, until chicken is no longer pink, about 5 minutes. Transfer chicken to a plate.

    Combine water, soup mix, raisins, curry powder and remaining 1 tbsp oil in a medium saucepan set over medium-high. Bring to a boil, stirring occasionally. Reduce heat to low. Simmer, covered, 2 minutes. Stir in couscous, then remove from heat and let stand covered 5 minutes. Stir in chicken and spinach.

    Garnish with slivered almonds and chopped fresh parsley, if desired.
