
Curried Sweet Potato Wedges

Position racks in top and bottom thirds of oven, then preheat to 475°F. Line two large baking sheets with foil.

Toss potatoes with oil, brown sugar, curry powder and salt in a large bowl. Transfer to prepared baking sheets.

Roast potatoes in top and bottom thirds of oven, stirring and switching sheets halfway through, until tender and browned, about 25 minutes.
