Grilled Chicken Sandwich

This grilled chicken sandwich is a barbecue classic! Sweet, spicy and sticky — it's ready to eat in under 20 minutes. Tip: The more time in the marinade the better, so if you can let the chicken sit for the full two hours, all the better. Serve chicken on large buns with your favourite toppings (just don't forget the pickle!).

    Slice each chicken breast in half horizontally. Combine oil, sugar, paprika, cumin, pepper and salt in a small bowl. Rub onto chicken. Cover and refrigerate for 2 hours.

    Preheat barbecue to medium-high.

    Oil grill. Barbecue chicken until an instant-read thermometer inserted into thickest part reads 165°F, about 4 minutes per side.

    Remove chicken to a plate and cover with foil. Let rest 5 minutes.

    Spread mayo onto sausage buns. Top with hot sauce, pickles, tomato and cheese.

    Place two pieces of chicken breast onto each bun and garnish with parsley.
