
Date Squares Recipe
Tip: Oats and dates are a great way to add extra fibre to your diet.

Combine dates and 1 1/2 cups water in a medium saucepan and set over medium-high. Bring to a boil, then reduce heat to low. Simmer, stirring occasionally, until mixture is thickened and only few pieces of dates remain, about 3 minutes. Stir in lemon juice and vanilla. Remove from heat and set aside to cool slightly.

Position rack in centre of oven, then preheat to 350°F. Lightly spray a 9-in square baking dish with non-stick cooking spray.

Combine flour, oats, brown sugar and baking soda in a medium bowl. Cut in margarine and remaining 2 tbsp water with a pastry cutter (or use your finger tips) until mixture resembles small peas.

Press half of oat mixture evenly onto bottom of prepared dish. Top with date mixture. Smooth top. Crumble remaining oat mixture overtop. Gently press down.

Bake until top is golden brown, about 30 minutes. Transfer to a rack to cool completely before cutting into squares.
