Deep Dish Apple Pie Recipe
Combine apples, brown sugar, granulated sugar, cinnamon, cloves and nutmeg in a large bowl. Toss to coat well.
Heat a large frying pan over medium-high. Add butter and apple mixture. Cook, stirring occasionally, until apples start to brown, about 6 to 8 minutes. Remove from heat and let cool for 30 minutes.
Position rack in centre of oven, then preheat to 400°F.
Sprinkle cornstarch and flour over cooled apples. Toss to coat. Set aside.
Thaw pie crusts following package directions. Remove one crust from foil pan and place gently into an 8x8-in baking pan. Carefully fill with apple mixture. Brush edges of crust with beaten egg. Remove second crust from foil pan. Gently place on top of apple mixture, tucking pastry edges inside pan.
Brush top crust with beaten egg. With a sharp paring knife, cut eight small slits in top pastry. Sprinkle turbinado sugar evenly overtop. Set pie on a baking sheet.
Bake for 15 minutes. Reduce oven temperature to 350°F and cover pie loosely with foil. Continue baking for 25 more minutes. Remove from oven. Discard foil. Let stand for at least 2 hours before cutting into pie.
