Oatmeal Chocolate Chip Cookies Recipe
Position rack in centre of oven, then preheat to 350°F. Line 2 baking sheets with parchment.
Place 1 cup of the chocolate chips in a small saucepan. Heat over low until melted. Let cool slightly.
Combine flour, baking powder, baking soda and salt in a medium bowl and mix well.
Beat margarine and sugar with an electric mixer in a large bowl until creamy.
Stir in melted chocolate, egg and vanilla. Gradually add flour mixture and mix well. Stir in oats and remaining 1 cup of the chocolate chips. Drop by rounded tablespoonfuls onto prepared sheet.
Bake, one sheet at a time, until set, 12 to 14 minutes. Let cool on sheet for 2 minutes, then remove to a rack to cool completely. Store tightly covered.
