Orange Walnut Muffins Recipe
Position rack in centre of oven, then preheat to 400°F. Mist a 12-cup muffin pan with cooking spray or line with paper liners.
Stir together flour, oats, sugar, baking powder, baking soda and salt in a large bowl. Add 1/2 cup of the walnuts and mix well.
Whisk together 2/3 cup of the orange juice, milk, egg and melted butter in a medium bowl. Add to flour mixture and stir until just combined. Divide batter among muffin cups. Sprinkle tops with remaining 1/4 cup of the walnuts.
Bake until a toothpick inserted in centre of a muffin comes out clean, 15 to 18 minutes.
Remove pan from oven and immediately spoon remaining 1/3 cup orange juice over tops of muffins, dividing evenly. Let stand 5 minutes. Remove from pan. Serve warm.
