Easy Apple Custard Pie Recipe
Position rack in centre of oven, then preheat to 375°F.
For the Crust: Combine 1 1/4 cups flour, 3/4 cup oats, 1/4 cup brown sugar and salt in a medium bowl. Stir in melted margarine, water and vanilla extract until well combined. Press mixture firmly onto bottom and sides of a 9-in glass pie plate, forming 1/4-in rim around edge. Bake until light golden brown, about 12 to 15 minutes. Transfer to a rack to cool completely.
For the Filling: Combine sour cream, 2/3 cup brown sugar, 1/4 cup flour, egg whites, cinnamon and nutmeg in a medium bowl. Stir in apples until coated. Spoon into cooled crust.
For the Topping: Combine remaining 1/4 cup oats, 1/4 cup brown sugar and 1/4 cup flour in a medium bowl. Cut in margarine cubes with pastry blender or two knives until mixture is crumbly. Sprinkle over filling.
Bake until a knife inserted in centre comes out clean, about 50 to 60 minutes. Transfer to a rack to cool slightly. Serve warm or chilled. Store tightly covered in refrigerator.
