Easy Vegetable & Chicken Pho Recipe
Cook rice noodles following package directions. Set aside.
Heat a large pot over medium-high. Add oil, then chicken, bok choy, carrot, shallots and five-spice powder. Cook, stirring frequently, until vegetables are almost tender, about 5 minutes.
Add water and chicken stock and stir until stock dissolves.
Increase heat to high and bring to a boil. Reduce heat to low, cover and simmer until vegetables are tender-crisp and chicken is cooked through, about 1 minute.
Stir in noodles. Ladle into bowls and serve with chopped cilantro and lime wedges, if desired.
