Easy Vegetable & Chicken Pho Recipe

Chicken and vegetables are cooked in chicken stock and spices, then served with wide rice noodles. Garnish with cilantro and lime wedges for added zest. Ready in under 20 minutes, this comforting soup is fast enough to make for a hot lunch at home.

    Cook rice noodles following package directions. Set aside.

    Heat a large pot over medium-high. Add oil, then chicken, bok choy, carrot, shallots and five-spice powder. Cook, stirring frequently, until vegetables are almost tender, about 5 minutes.

    Add water and chicken stock and stir until stock dissolves.

    Increase heat to high and bring to a boil. Reduce heat to low, cover and simmer until vegetables are tender-crisp and chicken is cooked through, about 1 minute.

    Stir in noodles. Ladle into bowls and serve with chopped cilantro and lime wedges, if desired.
