Easy Shortbread Cookies Recipe
Position rack in centre of oven, then preheat to 350°F.
Place margarine in a very large resealable bag. Seal and squeeze with hands until very soft. Add sugar and vanilla. Reseal, squeeze and knead until well mixed. Add oats and flour. Reseal, squeeze and knead until well mixed. Transfer dough from bag to your counter.
Roll dough into 1-in balls. Arrange 2-in apart on two baking sheets. Flatten with fingers or tines of a fork to 1/4-in thickness. Sprinkle dough with coloured sugar, if desired.
Bake until bottoms are light golden brown, about 12 to 14 minutes. Cool cookies on baking sheet for 1 minute, then transfer cookies to a rack to cool completely. Store tightly covered.
