1-hour 35-Minute recipe Serves 36
Easy-to-make vanilla sugar cookies that takes 15 minute to prep. Serve them after school for an extra-special treat, or sprinkled with sugar for a sparkling finish to dinner.

Tip: Sprinkle cookie cut-outs with coarse sugar before baking cookies (the sugar will stick to the dough more easily).

  • 1

Stir flour, baking powder and salt in a medium bowl.

  • 2

Beat margarine and sugar in a large bowl, using an electric mixer on medium, until creamy. Beat in egg and vanilla. Gradually beat in flour mixture until just combined.

  • 3

Shape dough into a ball. Divide ball in half and flatten each into a disc, then wrap in plastic. Refrigerate dough until firm, about 1 hour.

  • 4

Position rack in centre of oven, then preheat to 350°F. Line two baking sheets with parchment.

  • 5

Roll each portion of dough on a lightly floured counter to about 1/4-in thick. Cut dough into 2-1/2-in rounds using a cookie cutter. Arrange cookies on prepared sheets 2-in apart.

  • 6

Bake until edges just start to turn golden brown, about 9 minutes. Let cookies cool on sheet for 2 minutes. Then transfer cookies to a rack to cool completely.
