Stir flour, baking powder and salt in a medium bowl.
Beat margarine and sugar in a large bowl, using an electric mixer on medium, until creamy. Beat in egg and vanilla. Gradually beat in flour mixture until just combined.
Shape dough into a ball. Divide ball in half and flatten each into a disc, then wrap in plastic. Refrigerate dough until firm, about 1 hour.
Position rack in centre of oven, then preheat to 350°F. Line two baking sheets with parchment.
Roll each portion of dough on a lightly floured counter to about 1/4-in thick. Cut dough into 2-1/2-in rounds using a cookie cutter. Arrange cookies on prepared sheets 2-in apart.
Bake until edges just start to turn golden brown, about 9 minutes. Let cookies cool on sheet for 2 minutes. Then transfer cookies to a rack to cool completely.
