Classic Oatmeal Cookie Recipe
Position rack in centre of oven, then preheat to 350°F. Line 2 baking sheets with parchment.
Beat brown sugar, shortening and granulated sugar in a large bowl with an electric mixer until creamy. Add egg, water and vanilla and beat well.
Combine oats, flour, salt and baking soda in a medium bowl. Add oat mixture to sugar mixture and mix well.
Drop dough by rounded teaspoonfuls onto prepared sheets.
Bake, one sheet at at time, until edges are golden brown, 11 to 13 minutes. Let cool on sheet for 2 minutes, then remove to a wire rack to cool completely. Store tightly covered.
