Breakfast Cookies Recipe
Position rack in centre of oven, then preheat to 350°F. Line two baking sheets with parchment.
Combine flour, oats and cinnamon in a medium bowl.
Beat eggs, honey and butter in a large bowl, using an electric mixer on medium, until combined. Stir in walnuts, raisins and apricots. Stir in flour mixture until just combined. Fold in Cheerios.
Drop 2 tbsp-sized dough onto prepared sheets about 1-in apart.
Bake until cookies are firm, about 15 minutes. Transfer to a rack to cool completely.
