Pear, Apricot & Apple Cobbler Recipe

This cozy classic can be made with all kinds of different fruits—so we didn't choose just one! Apple, pear and apricot make each bite three times the fun. Tip: This cobbler recipe may be made in individual soufflé dishes (cooking time is 15 to 20 minutes). Serve with vanilla ice cream.

    Position rack in centre of oven, then preheat to 400°F.

    Stir 4 tbsp sugar, cornstarch and cinnamon in a large bowl. Add apples, pears and apricots. Toss until combined. Scrape into a 9x9-in baking dish. Drizzle orange juice and water overtop.

    Bake for 20 minutes.

    Meanwhile, combine flour, baking powder, baking soda, salt and remaining 2 tbsp sugar in a medium bowl. Cut in margarine with a pastry cutter (or two knives) until mixture is coarsely crumbled. Stir in yogurt and orange zest until crumbs are just moistened.

    Drop 8 mounds of flour mixture on top of baked fruit. Continue baking until top is golden brown, about 20 more minutes. Serve warm.

    TIP: Make this in individual serving dishes by dividing fruit between eight small ramekins.
