Pear, Apricot & Apple Cobbler Recipe
Position rack in centre of oven, then preheat to 400°F.
Stir 4 tbsp sugar, cornstarch and cinnamon in a large bowl. Add apples, pears and apricots. Toss until combined. Scrape into a 9x9-in baking dish. Drizzle orange juice and water overtop.
Bake for 20 minutes.
Meanwhile, combine flour, baking powder, baking soda, salt and remaining 2 tbsp sugar in a medium bowl. Cut in margarine with a pastry cutter (or two knives) until mixture is coarsely crumbled. Stir in yogurt and orange zest until crumbs are just moistened.
Drop 8 mounds of flour mixture on top of baked fruit. Continue baking until top is golden brown, about 20 more minutes. Serve warm.
TIP: Make this in individual serving dishes by dividing fruit between eight small ramekins.
