Prep: 10 mins | Cook: 25 mins
  • 1

Position rack in upper third of oven, then preheat broiler. Line a baking sheet with parchment.

  • 2

Spread baguette with 3 tsp of the butter. Place on prepared sheet and broil until lightly toasted.

  • 3

Rub inside of bread with cut side of 1/2 of the garlic clove. Sprinkle bread with cheese, then set aside.

  • 4

Season steak with salt and pepper. Heat a large frying pan over medium. Add 1 tsp of the butter, then steak. Cook until an instant-read thermometer inserted into the thickest part of steak reads 145°F for medium-rare, about 3 to 4 minutes per side. Remove steak to a cutting board, cover with foil and let rest for 5 minutes.

  • 5

Meanwhile, finely chop remaining 1/2 clove of garlic. Melt remaining 2 tsp butter in the same frying pan over medium. Add garlic and cook until fragrant, 30 seconds. Add water and bouillon. Increase heat to medium-high and bring to a boil, scraping brown bits from bottom of pan. Remove from heat and set aside.

  • 6

Thinly slice steak and place in a medium bowl. Spoon 2 tbsp of the bouillon mixture over steak, tossing to coat. Cover and let stand.

  • 7

Broil baguette until cheese is melted. Place steak onto bottom half of baguette, then top with top half of baguette. Cut sandwich into 4 pieces. Pour bouillon mixture into bowls for dipping.
