This quick-fix French onion soup recipe is on the table in under 20 minutes! Our shortcut? Simmered onion broth (caramelized onions take time and there's not always enough of that in the day).

Top it with toasted, crusty slices of bread and broil in the oven (don't forget oven-safe bowls) until the Gruyère cheese is bubbling hot.

    Position rack in centre of oven, then preheat broiler.

    Stir onion soup mix and cold water in a medium saucepan. Bring to boil over medium-high heat, whisking constantly. Reduce heat to low and simmer, partially covered, whisking occasionally, 5 minutes.

    Arrange 4 individual oven-safe bowls on a baking sheet. Pour soup into bowls. Top each bowl with a slice of bread, then evenly sprinkle cheese overtop.

    Broil until cheese melts and is golden, about 2 to 3 minutes. Serve hot.
