French-Canadian Split Pea Soup Recipe
Heat a large saucepan over medium. Add butter, then bacon. Cook, stirring occasionally, until bacon starts to crisp. Add ham. Cook, stirring occasionally, until ham starts to turn golden, about 5 minutes.
Add onion, carrot, celery and bay leaves. Continue cooking, stirring often, until vegetables are golden, about 5 more minutes. Add garlic, split peas and thyme. Cook for 2 minutes.
Add broth. Cook until the split peas are tender, about 30 to 33 minutes. Remove bay leaves. Stir in salt and black pepper.
