French-Style Pea Soup
Melt butter in a large sauce pan over medium heat, add bacon and sauté. When bacon starts to crisp, add ham and sauté for 5 minutes or until the ham starts to caramelize.
Add onion, carrots, celery and bay leafs, continue to sauté for 5 minutes or until caramelized. Add garlic, dried split peas and thyme, continue to cook for 2 minutes.
Add broth and cook until the split peas are tender. Remove bay leaves and season to taste.
