
French Vanilla Puffed Pancake Recipe

Top this breakfast-style dessert with fresh berries and serve it a la mode with rich vanilla ice cream. Tip: This puffed pancake recipe will puff up with the most impressive results when it's baked in a hot cast iron pan. (The heat helps create enough steam to inflate the pancake as it cooks).

Position rack in centre of oven, then preheat to 400°F.

Place margarine in an oven-proof 12-in frying pan and place in oven.

Combine milk, flour, eggs and sugar in a blender. Blend until smooth. Pour into heated pan.

Bake until puffed and golden, about 20 minutes.

Top pancake with fresh berries and ice cream. Dust with icing sugar overtop. Serve immediately.
